White Chocolate Mint Drops Recipe
- 6 ounce White chocolate chopped
- 1¾ cup Flour
- ½ tsp Baking powder
- ¼ tsp Salt
- 4 ounce Butter
- ½ cup Sugar
- 1 qty Egg
- 1 tsp Vanilla
- 2 tsp Cream
- ¼ tsp Mint essence
- 6-8 qty Pepper mint candies crushed
- Melt 2 ounce white chocolate and cool. Beat butter and sugar until creamy for 2 mins, add in melted white chocolate, beat until smooth, add in egg and vanilla and beat, fold in flour on low speed in two batches, then add in remaining chopped chocolate, make into balls.
- Place 2 inches apart on baking sheet, bake for 12-15 mins, remove and cool completely on wire rack, melt 4 ounces white chocolate, stir in cream and mint essence, dip the top of cookies in the glaze, return to the wire rack, immediately sprinkle with crushed candies and let it set.
