In a large saucepan or Dutch oven, heat the cooking oil until it reaches 375 degrees Fahrenheit (190°C).
Mix the extra-virgin olive oil and lemon pepper seasoning in a large bowl. Set aside.
Pat the wings dry with a paper towel.
Drop the wings into the hot oil and fry in batches for about 7-8 minutes. Use a meat thermometer to check each wing reaches an internal temperature of 165 degrees Fahrenheit (75°C).
Place the cooked wings on a wire baking rack and continue frying until all the wings are done.
While they’re still hot, toss the wings in the lemon pepper and olive oil mixture.
Serve with lemon wedges and sauce if desired.
