Mix all the ingredients, marinate for 1 hour , cook in 2 tbsp of oil and 1 tbsp of butter.
Saute Vegetable ( onions sliced, capsicum julienne, tomato julienne, carrots julienne, black olives , salt to taste, pepper 1/2 tsp, parsley 1/2 tsp . Mix and saute in butter for 2 mins. Remove and keep aside.
Assembling:
pita bread pockets, chilli mayo sauce or any sauce as per your choice , ranch sauce, jalapenos and some fresh lettuce leaves.
Heat up pita bread, place lettuce, sauce , chicken , veggies , some jalapenos, top it with some ranch sauce and ta-daa , these yummy chicken pockets are ready to enjoy!
