Instructions
Cream eggs and sugar till white and fluffy. Add oil and vanilla essence and beat again.
Gradually add sifted dry ingredients.Lastly add milk with peppermint essence and food colour and beat for a minute
Pour into greased rectangle pyrex, 30x20 cm.
Bake at 170 degrees for 25 minutes.
Allow to cool completely.
Cut into squares. Pour ganache over.Decorate with aero mint chocolate.
It can be made into cupcakes as well. Baking time will decrease to 15 minutes.
