Healthy Oats Pancake Chicken Sandwich Recipe

Ingredients
  

Chicken Patty:

  • 1 slice Bread
  • ¼ cup Low Fat Milk
  • 2 inch Ginger
  • 5-6 cloves Garlic
  • 1 medium Onion
  • 500 g Chicken Boneless Cubes
  • Salt To Taste
  • 1 tsp Cumin Seeds
  • 1 tsp Crushed Red Chilli
  • ½ tsp Black Pepper Powder
  • 1 Egg
  • 2 tbsp Mint leaves
  • 2-3 tbsp Fresh Coriander
  • 2 Fresh Red Chilli
  • 2 tbsp Green Onion
  • 1 tbsp Olive Oil

Oats Pancakes:

  • cup Instant Oats
  • 2 tbsp Whole Wheat Flour
  • 2 tsp Baking Powder
  • Salt To Taste
  • ¼ cup Yogurt
  • 2 Eggs
  • ½ cup Milk
  • 2 tsp Olive Oil

Yogurt & Vegetable Sauce:

  • 1 cup Yogurt
  • 1 Cucumber
  • 2 tbsp jalapenos
  • 1 cup Carrots
  • 1 tbsp Lemon Juice
  • ½ tsp Paprika Powder
  • 1 Tomato
  • Few Black Olives
  • Lettuce Leaves

Instructions
 

Chicken Patty:

  • In a chopper,add bran bread,milk,ginger,garlic,onion,chicken,salt,cumin seeds,red chilli crushed,black pepper powder,egg & chop until well combined.
  • Take out in a bowl, add mint leaves, fresh coriander, red chilli, green onion leaves & mix well.
  • Grease hands with oil,take a mixture (90g) and make patty of equal sizes (makes 8-9 patties).
  • In frying pan,add olive oil and spread it,place prepared chicken patties,cover & cook on low flame until golden brown (2 minutes each side) & set aside.

Oats Pancakes:

  • In a spice mixer,add instant oats & grind to make fine powder.
  • Take out in a bowl,add whole wheat flour,baking powder,pink salt & mix well.
  • Add yogurt, eggs and gradually add milk & whisk well until desired consistency (keep adding milk if mixture gets thicken)
  • Grease frying pan with olive oil,add ¼ cup of prepared batter,cover & cook on low flame for 1-2 minutes (makes 8 pancakes).

For Sauce:

  • In a bowl,add yogurt,carrots,cucumber,pickled jalapenos,lemon juice,paprika powder,pink salt and whisk well.

Assembling:

  • On oats pancake, add lettuce leaves, tomato, chicken patty, yogurt & vegetable sauce and place another pancake on top.
  • Garnish with pickled jalapenos,black olives & serve!
