Cheese Cake Bars Recipe

Ingredients
  

Prepare Candi Crust:

  • 2 packet Candi
  • 60 g Butter

Prepare Chocolate Ganache:

  • 100 g Milk Chocolate
  • 50 g Cream

Prepare Cheesecake Layer:

  • 200 ml Whipping Cream
  • 4 Egg Yolks
  • ¼ cup Caster Sugar
  • 200 g Yogurt
  • 200 g Cream Cheese
  • ½ tsp Vanilla Essence
  • ½ cup Chocolate Melted
  • 3 tbsp Water
  • 1 tbsp Gelatin Powder

Instructions
 

Prepare Candi Crust:

  • In a processor, add candi biscuits & crush biscuits in processor.
  • Add melted butter and process until well combined.
  • In 8 x 8 inch square baking pan lined with butter paper,add crumbled mixture & press firmly to set an even layer and refrigerator for 30 minutes.

Prepare Chocolate Ganache:

  • In a bowl, add milk chocolate, cream and microwave for 30-40 seconds then mix well until smooth then transfer to a squeeze bottle & set aside.

Prepare Cheesecake Layer:

  • In a bowl,add whipping cream and beat until soft peaks form & set aside.
  • In a bowl,add egg yolks,caster sugar,yogurt,cream cheese,vanilla essence and whisk until combined.
  • Transfer the bowl to a double boiler and cook for 8-10 minutes (Whisk gentle to maintain even temperature).
  • In a small bowl, add water, gelatin powder and mix well.
  • Now add dissolved gelatin in a bowl, mix well then remove from heat.
  • Add melted chocolate & whisk until well combined.
  • Let it cool completely.
  • Add whipped cream and fold until well combined with the help of spatula.
  • Pour the mixture over the candi crust, tap few times & freeze for 4-6 hours in freezer
  • Take out cheesecake from the pan and cut into bars.
  • Drizzle chocolate ganache,garnish with candi biscuits & serve.
