Baked Potato Jackets

Ingredients
  

  • 1 Liter Water
  • 3 Potatoes Large-Sized

Salsa Filling

  • 1 cup Tomatoes , Chopped
  • 1 cup Onion, Chopped
  • 1/2 cup Coriander, Chopped
  • 1-2 Green Chilies Chopped
  • 1-2 Garlic Chopped
  • 1 tbsp Olive Oil
  • 1 tbsp Chili Sauce
  • 1 tbsp Tomato Puree
  • Salt To Taste
  • Black Pepper To Taste
  • Oil For Greasing
  • 1 1/2 cup Mozzarella Cheese Shredded

Instructions
 

  • Heat the water in a pan, add potatoes to it and bring for a boil for ten to fifteen minutes.
  • Now for the salsa sauce, add tomatoes, onions, coriander, green chilies, garlic, olive oil, chili sauce, tomato puree, salt, and black pepper in a bowl.
  • Mix it thoroughly and keep aside. When the potatoes are soft, cut them into halves. Now scoop out the potatoes from the center and grease it with oil.
  • Fill the hollow potatoes with salsa sauce. Add the shredded mozzarella cheese on top.
  • Now, put the potatoes in the oven and bake them on 480 degrees F or 250 degrees C, for ten minutes. Baked potato jackets are ready to serve.
