Heat the water in a pan, add potatoes to it and bring for a boil for ten to fifteen minutes.
Now for the salsa sauce, add tomatoes, onions, coriander, green chilies, garlic, olive oil, chili sauce, tomato puree, salt, and black pepper in a bowl.
Mix it thoroughly and keep aside. When the potatoes are soft, cut them into halves. Now scoop out the potatoes from the center and grease it with oil.
Fill the hollow potatoes with salsa sauce. Add the shredded mozzarella cheese on top.
Now, put the potatoes in the oven and bake them on 480 degrees F or 250 degrees C, for ten minutes. Baked potato jackets are ready to serve.
