Lachay Wala Baisan Paratha Recipe

Ingredients
  

For Baisan Mixture:

  • 2 cups Gram Flour
  • 2 tsp Red Chilli Powder
  • 1 tsp Cumin Seeds
  • Salt To Taste
  • ½ tbsp Coriander Seeds
  • ½ tsp Turmeric Powder
  • ½ tsp Ajwain (Carom seeds)
  • 3 tbsp Mixed Pickle
  • 1 tbsp Fresh Coriander
  • ½ cup Clarified Butter
  • ¼ cup Water

For Paratha Dough:

  • 3 cups Flour
  • ½ tsp Salt
  • tbsp Ghee
  • ¾ cup Water
  • 1 tsp Oil
  • Fresh Coriander
  • Butter

Instructions
 

For Baisan Mixture:

  • In a frying pan, add gram flour & dry roast on low flame until fragrant (4-5 minutes).
  • In a bowl,add roasted gram flour,red chilli powder,cumin seeds,salt,coriander seeds,turmeric powder,carom seeds,mixed pickle,fresh coriander & mix well.
  • Add ghee & mix well.
  • Gradually add water, mix well until dough is formed & set aside.
  • If the mixture becomes too hard, add 1-2 tbs water to adjust consistency.

For Paratha Dough

  • In a bowl,add all-purpose flour,salt,ghee & mix well until it crumbles.
  • Gradually add water & knead until dough is formed.
  • Grease with oil,cover & let it rest for 30 minutes.
  • Knead dough again until smooth.
  • Take a small dough (115g) &make a ball, sprinkle dry flour & roll out with the help of rolling pin.
  • On rolled dough, add & spread prepared baisan mixture (2-3 tbs) with the help of greased hand & roll the dough.
  • Grease with ghee, sprinkle dry flour, twist & roll to make a ball.
  • Place dough ball on a butter paper, sprinkle dry flour, press gently & roll out with the help of rolling pin.
  • On heated griddle,place paratha,add clarified butter & cook from both sides until done (makes 7-8).
  • Garnish with butter,fresh coriander & serve with chutney!
