Chicken Fajita Rice Recipe

Ingredients
  

For Boiled Rice:

  • 2 cups Rice (Soaked)
  • Water As Required
  • 1 tbsp Salt
  • 2 tbsp Oil

For Chicken Fajita Rice:

  • cup Oil
  • 1 tbsp Chopped Garlic
  • cup Onion
  • cup Green Capsicum
  • cup Red Capsicum
  • cup Sweet Corn
  • ½ tsp Black Pepper Powder
  • Salt To Taste
  • 2 tbsp Red Chili Sauce
  • 1 tbsp Soy Sauce
  • Frozen Fajita Topping
  • 1 Chicken Stock Cube
  • Water As Required
  • Boiled Rice
  • Green Onion

Instructions
 

  • In a pot heat water and bring it to boil. Add salt and oil and bring it to boil.
  • Add soaked rice and cook until rice is 80% done. Strain and set aside

Chicken Fajita Rice:

  • In a pot heat oil and add garlic, cook for a minute. Add onion, green and red capsicum and cook for a minute.
  • Now chili sauce, soy sauce and mix well.
  • In a wok add stock cube and water and cook until stock dissolves. Transfer the sautéed veggies in the wok and mix well.
  • Thaw frozen Fajita Toppingz as per instructions on the pack.
  • Add Fajita Topping in the prepared vegetable mixture and give it a good mix.
  • Add boiled rice and mix well over high flame for a minute. Add salt and black pepper cook for 1-2 minutes. Sprinkle green onion and mix well.
  • Your Chicken Fajita Rice is ready. Serve and enjoy.
