Anda Cheese Paratha Recipe

Ingredients
  

  • 1 small Chopped Onion
  • 1 tbsp Oil
  • 1 Tomato
  • 2 Chopped Green Chillies
  • ½ tsp Red Chilli Powder
  • Salt To Taste
  • ¼ tsp Cumin Seeds
  • 1 tbsp Fresh Coriander
  • 2 Eggs

For Dough:

  • 2 cups All-Purpose Flour
  • ½ tsp Salt
  • Water As Required
  • Desi Ghee As Required
  • Mozzarella Cheese As Required
  • Cheddar Cheese As Required

Instructions
 

Prepare Paratha Filling:

  • In a frying pan,add cooking oil,onion & sauté until translucent.
  • Add tomato & mix well.
  • Add green chillies, mix well & cook for 1-2 minutes
  • Add red chilli powder, salt, cumin seeds, fresh coriander, mix well & cook until tomatoes are soft (2-3 minutes).
  • Add eggs, mix gently & cook on medium flame for 1-2 minutes.
  • Let it cool.

For Dough:

  • In a bowl,add all-purpose flour,salt & mix well.
  • Gradually add water,mix well & knead until dough is formed.
  • Grease with desi ghee,cover & let it rest for 30 minutes
  • Take a small dough (130g),make a ball, sprinkle dry flour & roll out with the help of rolling pin.
  • Add & spread desi ghee,sprinkle dry flour & cut into thin strips with the help of cutter.
  • Gather all layers together,stretch slightly then roll the dough & twist the dough into a ball.
  • In a dish,add desi ghee,place all dough balls,cover with a cling film & let it rest for 15 minutes.
  • On a clean surface,place the dough ball,press gently,sprinkle dry flour & roll out with the help of rolling pin.
  • Heat griddle, add desi ghee & let it melt.
  • Place paratha & cook on medium flame from both sides.
  • On one side of paratha, add mozzarella cheese, prepared filling, cheddar cheese & flip the other side of paratha over it.
    Cook from both sides with desi ghee until cheese melts (makes 4) & serve!
