Tuscan Panini Sandwich Recipe

Ingredients
  

  • 2 qty Boneless flattened chicken breast (slice 1 breast in 2 pieces)
  • 2 tsp Garlic paste
  • 1 tsp Salt
  • 1 tsp Black pepper (crushed)
  • 4 tbsp BBQ sauce
  • 1 tbsp Sriracha sauce
  • 1 qty Capsicum (sliced) 
  • 3 to 4 qty Tomato (slices)
  • ½ cup Cream cheese
  • 8 qty Plain bread slices
  • Lettuce leaves as required

FOR PESTO SAUCE

  • 1 cup Basil Leaves
  • 1 tbsp Garlic (crushed)
  • 3 qty Green Chilies
  • ¼ cup Pine nuts
  • ½ tsp Salt
  • 1 tsp Black Pepper(coarsely crushed)
  • ¼ cup Oil 

Instructions
 

  • Method for Pesto: Blend all the ingredients together to make pesto sauce.
  • Marinate chicken breast with salt, pepper, garlic paste, BBQ sauce and sriracha sauce. Grease grill pan with 2 tbsp oil and grill chicken breast for 10 minutes.
  • Remove from pan.
  • Add capsicum in same pan and sauté for 4-5 minutes.
  • Heat the bread slices in the greased grill pan.
  • Apply cream cheese then pesto sauce on all bread slices.
  • Place lettuce leaf over bread then tomato and capsicum, place chicken breast and cover with other bread slice.
  • Secure with tooth picks, cut from center and serve.
