Mughlai Mutton Stew Recipe

Ingredients
  

  • 750 gm Mutton
  • ½ cup Ghee
  • ¼ cup Oil
  • 6 qty Cloves (crushed)
  • 6 qty Pepper corn (crushed)
  • 2 qty Green cardamom (crushed)
  • 1 qty Cinnamon stick (crushed)
  • 1 qty Mace (crushed)
  • 1 qty Bay leaf
  • 1 qty Onion boiled and blended large
  • 2 tsp Ginger garlic heaped
  • ½ cup Yogurt
  • tsp Salt
  • 1 tsp Screw pine essence
  • Grind together
  • ½ cup Brown onion
  • 8 qty Red button chilies
  • 8 qty Cashew nuts
  • 1 tsp Melon seeds
  • 1 tsp Poppy seeds

Instructions
 

  • Heat ghee and oil in a pressure cooker, when ghee is hot add all the crushed whole spices, bay leaf, boiled onion paste, fry until golden, add ginger garlic paste, fry until onion is brown.
  •  Keep adding little water, add mutton, fry for 5 mins.
  • Add yogurt, salt and grinded masala with 2 cups of water, close pressure cooker, cook until mutton is done.
  • Lastly add kewra , mix well, serve with nan.
