Broccoli and Carrot Soup Recipe

Ingredients
  

  • 1 cup Broccoli Florets
  • 1/2 cup Thinly Sliced Carrots
  • 2 tsp Olive Oil
  • 1/2 cup Thinly Sliced Onions
  • 1 tbsp Chopped Garlic
  • 1/4 cup Soaked and Chopped Sun-Dried Tomatoes
  • Salt to Taste

Instructions
 

  • To make clear broccoli and carrot soup, heat the olive oil in a deep non-stick pan, add the onions and garlic and sauté on a medium flame for 1 minute
  • Add the carrots and celery and sauté on a medium flame for 1 minute.
  • Add the broccoli, 4 cups of hot water and salt, mix well and cook on a medium flame for 6 to 8 minutes, while stirring occasionally.
  • Add the sun-dried tomatoes and pepper, mix well and cook on a medium flame for 1minute, while stirring occasionally
  • Serve Broccoli and Carrot Soup immediately.
