Broccoli and Carrot Soup Recipe
Ingredients
- 1 cup Broccoli Florets
- 1/2 cup Thinly Sliced Carrots
- 2 tsp Olive Oil
- 1/2 cup Thinly Sliced Onions
- 1 tbsp Chopped Garlic
- 1/4 cup Soaked and Chopped Sun-Dried Tomatoes
- Salt to Taste
Instructions
- To make clear broccoli and carrot soup, heat the olive oil in a deep non-stick pan, add the onions and garlic and sauté on a medium flame for 1 minute
- Add the carrots and celery and sauté on a medium flame for 1 minute.
- Add the broccoli, 4 cups of hot water and salt, mix well and cook on a medium flame for 6 to 8 minutes, while stirring occasionally.
- Add the sun-dried tomatoes and pepper, mix well and cook on a medium flame for 1minute, while stirring occasionally
- Serve Broccoli and Carrot Soup immediately.
