Shahi Aaloo Palak Recipe

Ingredients
  

  • 500 gm Spinach 
  • 3 medium Potatoes 
  • 2 medium Tomatoes 
  • 1 tsp Ginger 
  • 1 tbsp Garlic 
  • 2 Green Chillies (Crush with ginger & garlic)
  • 1 medium Onion 
  • 1 tsp Turmeric Powder
  • 1 tbsp Coriander Powder
  • 1 tsp Chilli Powder
  • 1 tsp Red Chilli Flakes
  • 1 tbsp Cumin Seeds
  • Salt To Taste
  • ¾ tbsp Mustard Oil

Instructions
 

  • In a pot heat mustard oil, add cumin seeds and fry for 30 seconds.
  • Add onion and fry for 2 minutes. Now add Ginger, garlic and chilli paste and fry for another 1 minute.
  • Add potatoes and fry for 3/4 minutes.
  • Now add tomatoes, all remaining spices and mix well. Cover and cook for 7/8 minutes.
  • At this point add chopped spinach. Give a good stir and simmer this covered with a lid on low for 5 minutes, then uncovered until the moisture from the spinach has been cooked out and there isn't any murky-coloured water left.

For Tarka:

  • In a 2 tbsp ghee add whole red chilli and cumin seeds, fry for a minute and pour in your Aalo palak.
  • Garnish with Green chillies and Coriander.
