Kulfi

Ingredients
  

  • 1 lit Milk
  • 1 cup sugar
  • 1 pinch Stearic acid
  • 200 gm Skimmed milk
  • 1 tsp Cardamom Powder

Instructions
 

  • Heat milk in a wide pan
  • Keep stirring on low heat till it reduces by one-third
  • Keep scraping the sides of the pan and the pan to prevent burning/scalding
  • Boil again for 3 to 4 minutes
  • Divide the milk into two equal parts
  • Keep one part aside
  • Sprinkle citric acid on the other side
  • After a while the milk will curdle like curd
  • If the milk does not curdle, then add the remaining stearic acid to it
  • Immediately add Fentancid to the mixture
  • Add condensed milk, remaining boiled milk and cardamom powder
  • Mix well
  • Pour into kulfi moulds
  • Allow to set in the freezer section of the refrigerator for 8 to 10 hours
  • To serve for food. Remove from the fridge. Dip the molds in water
  • Open them and take out the kalfi
  • Cut into pieces and serve to eat
