Aalu Bhindi Karahi

Ingredients
  

  • 1/2 kg Small bhindi
  • 2 nos Potatoes
  • 3 nos Tomatoes chopped
  • 1 tbsp Garlic crushed
  • 2 tbsp Tomato puree
  • 1 tsp Dried fenugreek
  • 1 1/2 tsp Coriander powder
  • 1/2 tsp All spice powder
  • 1 tsp Salt
  • 1 tsp Chili powder
  • 1 tsp Sugar
  • 1 1/2 cup Onion finely sliced
  • Oil for frying

Instructions
 

  • Heat oil in a wok, fry bhindi on medium flame for 5 mins till it gets cooked, fry the second batch of bhindi, remove and deep fry the potato fingers to a golden-brown color till it gets cooked, remove from wok.
  • Heat ΒΌ cup oil in a karahi, add onion, garlic, fry till transparent, add blended tomatoes, dried fenugreek , all the dry seasonings, cook for 5 mins on low flame, add in potatoes, bhindi, stir fry for a few mins, cover and cook on low flame for 5 mins, serve with roti.
