
Mutton Roghan Josh Recipe
Ingredients
- 500 gram Butter
- 2 kg Mutton shanks
- 1 kg Onion slice
- 2 tsp Ginger garlic paste
- 12 piece Clove
- 2 tsp Coriander powder
- 1 tsp Black pepper corn
- 3 qty Cinnamon stick
- 3 qty Bay leave
- 4 piece Large cardamom
- ½ tsp Turmeric
- 2 tsp Red chili powder
- 2 tsp Kashmiri chili powder
- ½ tsp Mace powder
- ½ tsp Nutmeg powder
- 1 tsp All spice
- 500 gram Yogurt
- 1 gram Saffron soaked in milk
Instructions
- Heat butter in pressure cooker add clove, black pepper, cinnamon stick, bay leave, large cardamom, cook 1 minutes add sliced onions and cook again till soft and become yellow.
- Add mutton and ginger garlic paste cook 6 minutes reduce mutton water add remaining spice and yogurt accept saffron and garam masala.
- Again cook 5 minutes know add 2-liter waster and cover it for 50 minutes till mutton become tender, know add garam masala and saffron cook 5 minutes on slow flame for fragrance.
- Served hot with nan.
