  • 4 Eggs
  • 1 cup Castor Sugar
  • ½ cup Oil
  • 1 tsp Vanilla Essence
  • 1 cup Flour
  • 2 tbsp Corn Flour
  • 2 tsp Baking Powder
  • ½ cup Milk
  • ½ tsp Peppermint Essence (optional)
  • ½ tsp Green Food Color


  • Cream eggs and sugar till white and fluffy. Add oil and vanilla essence and beat again.
  • Gradually add sifted dry ingredients.Lastly add milk with peppermint essence and food colour and beat for a minute
  • Pour into greased rectangle pyrex, 30x20 cm.
  • Bake at 170 degrees for 25 minutes.
  • Allow to cool completely.
  • Cut into squares. Pour ganache over.Decorate with aero mint chocolate.
  • It can be made into cupcakes as well. Baking time will decrease to 15 minutes.
