Cheese Cake Bars Recipe
Ingredients
Prepare Candi Crust:
- 2 packet Candi
- 60 g Butter
Prepare Chocolate Ganache:
- 100 g Milk Chocolate
- 50 g Cream
Prepare Cheesecake Layer:
- 200 ml Whipping Cream
- 4 Egg Yolks
- ¼ cup Caster Sugar
- 200 g Yogurt
- 200 g Cream Cheese
- ½ tsp Vanilla Essence
- ½ cup Chocolate Melted
- 3 tbsp Water
- 1 tbsp Gelatin Powder
Instructions
Prepare Candi Crust:
- In a processor, add candi biscuits & crush biscuits in processor.
- Add melted butter and process until well combined.
- In 8 x 8 inch square baking pan lined with butter paper,add crumbled mixture & press firmly to set an even layer and refrigerator for 30 minutes.
Prepare Chocolate Ganache:
- In a bowl, add milk chocolate, cream and microwave for 30-40 seconds then mix well until smooth then transfer to a squeeze bottle & set aside.
Prepare Cheesecake Layer:
- In a bowl,add whipping cream and beat until soft peaks form & set aside.
- In a bowl,add egg yolks,caster sugar,yogurt,cream cheese,vanilla essence and whisk until combined.
- Transfer the bowl to a double boiler and cook for 8-10 minutes (Whisk gentle to maintain even temperature).
- In a small bowl, add water, gelatin powder and mix well.
- Now add dissolved gelatin in a bowl, mix well then remove from heat.
- Add melted chocolate & whisk until well combined.
- Let it cool completely.
- Add whipped cream and fold until well combined with the help of spatula.
- Pour the mixture over the candi crust, tap few times & freeze for 4-6 hours in freezer
- Take out cheesecake from the pan and cut into bars.
- Drizzle chocolate ganache,garnish with candi biscuits & serve.
