Arabic Style Parda Biryani Recipe

Ingredients
  

  • 1 cup Maida
  • Salt to taste
  • 5 tbsp Vegetable oil
  • 1 tbsp Yeast
  • 1 cup Warm water
  • 300 gm Rice soaked for 20 minutes in water
  • ½ kg Chicken
  • 1 qty Onion
  • 1 inch Garlic
  • 5 qty Ginger
  • 1 qty Black cardamom
  • 1 tbsp Black pepper
  • 10 gm Cinnamon sticks
  • 6 qty Cloves
  • 1 to 2 qty Bay leaves
  • 1 tbsp Garam masala
  • 10 to 12 qty Almond
  • 5 qty Green cardamom
  • 5 qty Green chillies nos chopped
  • 1 cup Frozen Matar/peas

Instructions
 

  • Steps For making Dough.
  • Take a bowl and add 1 cup of warm water,yeast,and 2 tbs of Maida and mix it.
  • After Mixing it leave it for 10-15 mints so that yeast will be active.
  • After 15 mints the yeast will be active and you will see small bubble on the surface of dough.
  • At this stage add salt to taste,add 2 tbs of vegetable oil.
  • Mix it continuously while adding maida slowly slowly and make a smooth dough.
  • Then leave it for 20-25 mins.
  • Now till it settles lets prepare biryani for its filling.
  • For this take a pan and add 3 tbs of Vegetable oil and heat it.
  • After oil heats up add 2 nos of bay leaves and the add finely chopped onion,ginger and garlic and mix it and cook it for 1 min.
  • After onion softens a bit add chicken and mix it and cook it for another 1- 2 mins.
  • Then after 2 mins add all the spices 1 black cardamom,1 tbs black paper,salt to taste,10 grams cinnamon sticks,6 no s of cloves,10-12 nos of almond,5 nos of green cardamom,5 chopped chills, 1 tbs garam masala, and cook it for 1 min.
  • After 1 min open the lid and add 1 cup of warm water and cook it again for 1 min.
  • After 1 min add rice which is soaked for 20 min in water and mix it well and cover it and cook it for 10 min in high flame.
  • Now after 10 mins open the lid and add 1 cup of frozen peas/matar and mix it and cook it till rice is 85% cooked.
  • After that close the gas and put the biryani a side to cool down.
  • Lets go to the Dough we have left it in step 7 .it will be double of its size now.
  • Now take this dough to the kitchen plat form and spread it with a belan like big bread/roti but make it a bit thick.
  • Now take steel bowl and grease it from inside with vegetable oil and place the flat dough inside the bowl so that its attached to its inner surface.
  • Now fill the biryani we have prepared earlier inside the bowl and cover it by joining the edges of the dough make it like a ball.
  • For baking it you can bake it in a microwave/oven but here i will show you process how to bake it in a pressure cooker.
  • Take a pressure cooker and add salt/sand at its base and pre heat it for 5 mins.
  • After preheat place a stand inside the cooker and place the bowl in which we have the dough in it and cover the cooker lid with its whistle and rubber removed.
  • And bake it on the gas for 20 mins on low flame.
  • After 20 mins remove the lid of cooker and apply vegetable oil on the surface of dough and again cover the lid and cook it for 20 mins in low flame.
  • Now after 20 mins the dough will be golden brown in color. leave it for sometime for cooling.
  • After cooling remove the dough in a plate and give a cut to it and hot spicy biryani will come out of it.
  • Now serve it to your dear one .
