Ingredients
  

  • 1 kg Fresh round brinjals ( 4 cuts from center)
  • 2 tbsp Sesame seeds (roasted and grinded)
  • 2 tbsp Peanuts (roasted and grinded)
  • 2 tbsp Desiccated coconut (roasted and grinded)
  • 2 tbsp Coriander powder
  • 1 tbsp Cumin powder
  • 1 tbsp Garlic paste 
  • 2 tbsp Chili powder
  • ½ tbsp Turmeric
  • ½ tbsp Salt
  • ½ cup Tamarind pulp
  • ½ cup Oil

FOR BAGHARE

  • 20 Curry leaves
  • 8 Button red chilies
  • ½ tbsp Mustard seeds
  • ½ tbsp Fenugreek seeds
  • ½ tbsp Onion seeds
  • 1 tbsp White cumin seeds

Instructions
 

  • Heat oil add baghar slightly fry.
  • Add all the dry seasonings with ¼ cup water
  • Fry well add brinjals with another ½ cup water
  • Cover and cook till nearly done lastly add tamarind pulp
  • Leave it on dum for 10 minutes and remove.
