
Baghare Baingan Recipe
Ingredients
- 1 kg Fresh round brinjals ( 4 cuts from center)
- 2 tbsp Sesame seeds (roasted and grinded)
- 2 tbsp Peanuts (roasted and grinded)
- 2 tbsp Desiccated coconut (roasted and grinded)
- 2 tbsp Coriander powder
- 1 tbsp Cumin powder
- 1 tbsp Garlic paste
- 2 tbsp Chili powder
- ½ tbsp Turmeric
- ½ tbsp Salt
- ½ cup Tamarind pulp
- ½ cup Oil
FOR BAGHARE
- 20 Curry leaves
- 8 Button red chilies
- ½ tbsp Mustard seeds
- ½ tbsp Fenugreek seeds
- ½ tbsp Onion seeds
- 1 tbsp White cumin seeds
Instructions
- Heat oil add baghar slightly fry.
- Add all the dry seasonings with ¼ cup water
- Fry well add brinjals with another ½ cup water
- Cover and cook till nearly done lastly add tamarind pulp
- Leave it on dum for 10 minutes and remove.
