Mughlai Chicken Pulao Recipe
Ingredients
- 1 Whole Chicken
- 1 kg Minced Mutton
- 2 cups Ghee
- 4 Onion
- ¼ kg Curd
- ½ kg Rice
- ½ tsp Saffron
- Few And Fried Almonds
- 4 Bay Leaf
- 1 Cinnamon Stick
- 10 Cloves
- 6-8 Green Cardamoms
- 12-15 Black Peppercorns
- 3 pods Garlic
- 1 piece Ginger
- 1 tsp Red Chili Powder
- 2 tsp Coriander Seeds Powder
- 1 tsp Cumin Seed Powder
- ¼ tsp Turmeric Powder
Instructions
- First grind garlic, ginger, chili powder, coriander, turmeric and cumin powder to a fine paste.
- Now heat 4 tblsp of ghee and fry 2 onions till brown.
- Add half the whole spices and then add chicken and mince meat and let it brown.
- Add ground spices and fry for a few minutes along with chicken and mince.
- Add 2 cups of hot water, cover and cook till chicken is tender.
- Beat the curd with saffron and add to chicken.
- Cook uncovered for 10 minutes.
- Remove from flame and keep aside.
- Now heat the remaining ghee and fry bay leaves and remaining whole spices.
- Add onions and brown them well.
- Add rice and fry till brown.
- Add enough water to cook rice and also 1 tsp of salt.
- Spread a layer of rice on a flat serving dish and then another layer of meat.
- Repeat with one more layer of each. Garnish with almonds.
- Serve with Raita and Salad.

- Sab se pehlay lahsun, adrak, mirch powder, dhaniya, haldi aur zeera powder ko bareek pees len .
- Ab 4 chamach ghee garam karen aur 2 pyaaz ko brown honay tak bhoonen .
- Aadha poora masala dalain aur phir chicken aur gosht ka qeema daal kar brown honay den .
- Pissa hua masala daal kar chicken aur qeema ke sath chand minute tak bhoonen .
- 2 cup garam pani daal kar dhak dea aur chicken naram honay tak pakayen .
- Dahi ko zafran ke sath phaint kar chicken mein shaamil karen .
- 10 minute tak bagair daapein pakayen. Ab isko aik taraf rakh dea.
- Ab baqi ghee ko garam karen aur tez patta aur baqi sara masala daal kar bhoonen.
- Pyaaz daal kar achi terhan brown kar len .
- Chawal daal kar brown honay tak bhoonen .
- Chawal paknay ke liye kaafi pani aur 1 chamach namak shaamil karen .
- Aik dish par chawal ki aik teh philayin aur phir gosht ki aik aur teh. Isi tarah aik do bar teh lagaye.
- Badam ka saath garnish karen.
