
Roasted Chicken With Cashew Rice Recipe
Ingredients
- ½ kg Chicken thighs
- 2 tsp Peri peri sauce
- ½ tsp Garlic powder
- 50 gram Oil
- 1 qty Carrot
- 1 qty Zucchini
- 1 qty Onion
- 1 qty Brinjal
- 1 qty Green capsicum
Ingredients For Rice:
- ½ kg Rice ½ kg
- Water as required
Ingredients For Spice:
- 1 tsp Cumin powder
- ½ tsp Red chili flakes
- 1 tsp Paprika
- 1 tsp Turmeric
- 1 qty Chicken cube
- 1 qty Bay leave
- ¼ qty Salt
- 30 gram Oil
- 1 cubed Capsicum
- cashews
Instructions
- Baked/ cooked the chicken with peri peri sauce and garlic powder separately first.
- Add oil in a pan separately then capsicum, zucchini onion, brinjal and carrot.
- Cook it well for 5-6 minutes, Add the cooked chicken in the vegetables.
Method For Rice:
- Add water in a pot, Put all rice spices and mix it well to remove the lumps.
- Add oil, Put it on flame to boil. When comes to boil then add soaked rice with medium flame.
- When very small quantity of water is left then add the cubes capsicum.
- Garnish it with cashews.
