
Shahjahani Chicken With Saffron Rice Recipe
Ingredients
Ingredients:
- 1 kg Chicken whole
- 2 tsp Tandoori masala
- ½ cup Yogurt
- 1 tsp Salt
- 1 tsp red chili powder
- 1 tsp Ginger garlic
- 2 qty Tomatoes blended
- ½ cup Brown onion grinded
- 2 tsp Coriander leaves grinded
- ¼ cup Oil
- 2 cup Tomato paste
- ½ tsp Allspice heaped
- 1 tsp Crushed red pepper
- 2 tsp Coriander leaves
- 3 qty Green chilies
- 1 qty Potato large cut into cubes and deep fried
- 2 qty Boiled eggs
Ingredients for Saffron Rice:
- ½ kg Boil rice
- 3 tsp Oil
- 1 tsp Chicken powder
- ¼ tsp Yellow color
- ½ tsp Saffron essence
- 8-10 qty Cashew nuts fried
- 2 tsp Raisins fried
Instructions
METHOD FOR RICE:
- Heat oil in a pan, add in boiled rice, chicken powder with ¼ cup water, top with yellow color, saffron essence, leave it on dum.
METHOD FOR CHICKEN:
- In a pan put 1 cup water with whole chicken, tandoori masala, yogurt, salt, chili powder, ginger garlic paste, cover and cook till chicken tender.
- In a pan heat oil, add blended tomatoes, crushed red pepper, allspice powder, fry for 5 mins, add in the whole chicken, leave it on dum for 10 mins.
- Then add in whole green chilies and coriander leaves.
TO ASSEMBLE:
- Put rice on a serving platter surround with boiled and fried potatoes, boiled eggs, cooked chicken in the center, top with fried nuts, serve immediately.
