
Shrimp Fajita Rice Recipe
Ingredients
- 300 gm Shrimps washed
- ¼ tsp Turmeric
- 1 tsp Garlic paste
- 2 tsp Lemon juice
- 1 tsp Crushed red pepper
- ¼ cup Oil
FOR RICE
- ½ cup Sweet corne
- ½ cup Red bell pepper julienn
- ½ cup Capsicum julienne
- ½ cup Yellow bell pepper julienne
- 3 tsp Chopped jalapeno
- 2 tsp Chopped coriander
- 2 tsp Garlic chopped
- 2 qty Tomatoes chopped (seeds removed)
- 1 cup Onion chopped
- 2 ounce Butter
- 1 tsp Chili powder
- ½ tsp Black pepper
- 1 tsp Crushed red pepper
- ½ tsp Paprika
- 1 tsp Salt
- 1 tsp Garlic powder
- 1 tsp Oregano
- 1 tsp Parsley
- 1 tsp Roasted & crushed cumin
- 1 tsp Chicken powder
- ¼ cup Water
- 3 cups Boiled rice with salt
TO SERVE
- 1 cup Sour cream
- ½ cup Chopped spring onion
- ¼ cup Cheddar cheese grated
Instructions
- Marinate shrimps and pan fry in butter for just 2 mins, do not overcook.
- In the same pan add butter with ¼ cup oil, fry chopped onion and garlic till soft.
- Add sweet corn, jalapeno, bell peppers, coriander and tomatoes, fry for 2 mins.
- Add in all the spices, chicken powder and water, add rice, cook for 5 mins, leave it covered on low flame.
- Make sar cream by mixing ½ cup cream and 3 tbsp lemon juice.
