Cut the potato in fries or any shape.
Fry the potato strips (chips/fries) and drain on kitchen towels.
Lightly beat the eggs with a bit of salt and pepper.
Heat a small 6″ saucepan, add the oil. Sprinkle the fries and any other additions that you plan to us into the pan.
Do not overcrowd the pan. Pour the beaten eggs to cover everything. Cook for a couple of minutes on medium heat
Once the bottom of the zege is nicely coloured, gently ease a spatula under it and flip it. Cook some more until both sides are evenly coloured.
Serve hot with some ketchup and chopped coriander.
