
Delhi Darbar Style Raan Recipe
Ingredients
FOR MARINATION
- 2 kg Raan (or simply use mutton or chicken pieces)
- 4 tbsp Mustard oil
- 3 tbsp Garlic paste
- 1 tbsp Ginger paste
- Salt to taste
- 3 qty Juice of limes
- 3 tsp Red chilli powder
- Pinch of red colour
FOR PASTE
- 6 qty Fried onion barista
- 250 gm Yogurt
- 2 qty Cashew nut
- 1 qty Fist peeled almond
- 4 qty Fist magaj
- 2 tsp Coriander powder
- 1 tsp Cumin powder
- 1 tsp Tumeric
- 1 tsp Garam masala powder
- 1 tsp Cardamom powder
- 1 tsp White pepper powder
- 1 tbsp Kasoori methi
- 1 tsp Fennel seeds powder
- Little saffron
- Salt to taste
- 1 tbsp Rose water
- 1 qty Chopped coriander
- 2 drops Kewra essence
- 1 cup Cream
Instructions
- Make slits onto raan.
- Marinate raan with mustard oil, salt, garlic paste,ginger paste, juice of limes ,red chilli powder and pinch of red colour.
- Let this marinate in the fridge for few hours.
- In a blender grind fried onion barista,yogurt ,cashew nut ,peeled almond ,magaj,coriander powder,cumin powder,tumeric ,garam masala powder,cardamom powder ,white pepper powder, kasoori methi, fennel seeds powder, little saffron and salt to taste.
- Blend to fine paste.
