
Mutton Roast Karahi Recipe
Ingredients
- 1 kg Mutton
FOR DRY MASALA
- 5 qty Round red chilies
- 5 qty Cayenne chilli
- 1 tsp Coriander seeds
- 1-1/2 tsp Cumin seeds
- 1-1/2 tsp Fennel seeds
- 1 tsp Black pepper whole
- 1 tsp Dried fenugreek
- ½ tsp Mustard seeds
- 1-1/2 tsp Brown sugar
- ½ tsp Chicken powder
- 1 tsp Salt 1tsp
FOR WET PASTE
- 1 tsp Yogurt
- 1 qty Onion
- 6 clove Garlic
- 1 tsp Tamarind paste
- ½ cup Clarified butter
FOR KARAHI
- Oil as required
- 4 qty Green chilies
- 5 qty Curry leaves
- ½ tsp Turmeric powder
- 1 tsp Ginger chopped
- ½ tsp Red chili powder
- 1 tsp Black pepper
- 1-1/2 tsp Cumin roasted crushed
- 1-1/2 tsp Coriander roasted crushed
- 4 tsp Yogurt
- 5 qty Tomatoes
- 1 tsp Fenugreek dried
- Green chilies as required
- 2 tsp Ginger strips
Instructions
- Grind all the dry ingredients and make a fine powder , now blend all wet ingredients to make paste.
- Now mix both dry and wet ingredients , now marinate mutton in this batter for 4 to 6 hours.
- Now bake it or boil for half and hour , to make karahi heat oil sauté ginger , now stir add green chilies , curry leaves and all the spices except dried fenugreek mix.
- Add this in mutton and its stock also, cook on high flame till oil separates , lastly garnish with green chilies and serve.
