
Roghan Josh Recipe
Ingredients
- ½ kg Mutton
- ½ cup Oil
- 2 qty Cloves
- 1 stick Cinnamon
- 1 tsp Cardamom powder
- 1 qty Bay leaf
- 1 tsp Fennel seeds grinded (heaped)
- ¼ tsp Dried ginger grinded (heaped)
- 1 tbsp Ginger garlic paste
- 1 tbsp Chili powder
- 1½ tsp Salt
- 1 tsp Pepper
- 1 cup Yogurt
- ½ tsp Green cardamom grinded
- ¼ tsp Saffron
Instructions
- Heat oil, add whole spices fry 2 minutes.
- Add mutton fry for 5 minutes.
- Add ginger garlic paste, chili powder, salt and pepper with grinded fennel, grinded dried ginger powder, reduce heat.
- Add yogurt, cardamom powder, keep stirring till it boils.
- Add 1½ cup water, cover and cook till mutton tender.
- Lastly add saffron, simmer for 5 minutes and serve wit nan.
