
Tuscan Panini Sandwich Recipe
Ingredients
- 2 qty Boneless flattened chicken breast (slice 1 breast in 2 pieces)
- 2 tsp Garlic paste
- 1 tsp Salt
- 1 tsp Black pepper (crushed)
- 4 tbsp BBQ sauce
- 1 tbsp Sriracha sauce
- 1 qty Capsicum (sliced)
- 3 to 4 qty Tomato (slices)
- ½ cup Cream cheese
- 8 qty Plain bread slices
- Lettuce leaves as required
FOR PESTO SAUCE
- 1 cup Basil Leaves
- 1 tbsp Garlic (crushed)
- 3 qty Green Chilies
- ¼ cup Pine nuts
- ½ tsp Salt
- 1 tsp Black Pepper(coarsely crushed)
- ¼ cup Oil
Instructions
- Method for Pesto: Blend all the ingredients together to make pesto sauce.
- Marinate chicken breast with salt, pepper, garlic paste, BBQ sauce and sriracha sauce. Grease grill pan with 2 tbsp oil and grill chicken breast for 10 minutes.
- Remove from pan.
- Add capsicum in same pan and sauté for 4-5 minutes.
- Heat the bread slices in the greased grill pan.
- Apply cream cheese then pesto sauce on all bread slices.
- Place lettuce leaf over bread then tomato and capsicum, place chicken breast and cover with other bread slice.
- Secure with tooth picks, cut from center and serve.
