Ingredients
  

Ingredients for dough:

  • 3 cups Flour heaved
  • 5 tsp Ghee
  • 1 tsp Salt
  • ½ tsp Carom seeds
  • Water to knead

Ingredients for potato filling:

  • 3 qty Potatoes peeled boiled and coarsely mashed
  • 1 tsp Cumin seeds roasted and crushed
  • 1 tsp Coriander seeds roasted and crushed
  • ½ tsp Salt
  • 1 tsp Chaat masala
  • ½ tsp Fennel seeds roasted and ground
  • 2 tsp Lemon juice
  • ½ tsp Chopped ginger
  • 2 qty Green chilies very finely chopped
  • 1 tsp Crushed red pepper
  • ¼ tsp Turmeric

Instructions
 

Method for dough:

  • Mix altogether and knead into a hard dough, Leave to rest for 1 hour. Make into balls, Roll into saucer size roti, Cut in half from center. Apply water on side put filling and fold as demonstrated.

Method for filling:

  • Heat oil 2 tsp, fry 2 tsp onion till transparent. Add crushed ginger with turmeric, crushed red pepper and all the rest, lemon juice and potatoes. 
  • Mix well and cool. To assemble, grease your surface, Roll out the dough. cut and make It into half.
  • Make a cone using water to seal edges, Fill with potato filling, Seal edges and pinch the sides fry in warm oil on low flame.

Instructions
 

  • Cook all chicken filling ingredients in 1tbsp oil to cook on low flame and give coal smoke.
  • Roll puff pastry apply sauce and put filling in it, put some vegetables, oregano, thyme and filling over it and bake for 15 minutes.
  • Lastly garnish with mayonnaise to serve.

  • 2 tbsp Yogurt heaped

FOR CHUTNEY

  • ¼ cup Tamarind Pulp
  • 2 tbsp Coriander Leaves
  • 2 qty Green chilies
  • 8 qty Mint Leaves
  • 1 tsp Cumin seeds
  • ½ tsp Garlic chopped
  • 2 tbsp Yogurt

FOR PARATHA

  • 2 cups Flour
  • 1 cup Fine Wheat Flour
  • ½ tsp Salt
  • 1 tbsp Sugar
  • ¼ cup Oil
  • Water to knead
  • Ghee For Filling And Frying

Instructions
 

  • Cut 250 gm chicken into thin long strips.
  • Marinate with 1 tsp raw Papaya, 1 tsp Chili powder, 1 tsp all spice, 1 tsp Salt, a pinch Turmeric, 1 tsp roasted crushed cumin seeds, 1 tsp ginger garlic and 2 tbsp Yogurt for 1 hour.
  • Pan fry in 2 tbsp Oil.
  • Give it dam of coal and keep aside.
  • In a bowl mix together the 2 cup flour, 1 cup fine wheat flour, 1 tsp salt, 1 tbsp sugar and lukewarm water as required.
  • Knead to form smooth dough
  • Divide dough into equal portions and shape into round balls.
  • Roll out each ball of dough into a disc.
  • Heat oil in a griddle and fry the parathas.

METHOD FOR CHUTNEY

  • Blend together ¼ cup tamarind pulp, 2 tbsp coriander leaves, 2 green chilies,8 mint leaves, 1 tsp cumin seeds, ½ tsp chopped garlic and 2tbsp yogurt till smooth.

TO ASSEMBLE PARATHA

  • Take prepared paratha, spread with Bihari chicken, top with onion rings, mint leaves, some chatni , and roll tightly, re-roll in butter paper and serve immediately.
